Raw Zucchini Ribbon Salad with Olives and Mint

Instructions

  1. Cut the ends from the raw zucchini, then use a vegetable peeler to shave the zucchini lengthwise into long, wide strips, about 1/16 inch thick.
  2. Whisk together the olive oil and lemon juice, mix in the lemon zest, then season to taste.
  3. Toss the zucchini, mint, and olives in the dressing.
  4. Plate, garnish with the goat cheese, and serve chilled.
