Raw Zucchini Ribbon Salad with Olives and Mint

Ingredients
- 2 T olive oil
- 2 T lemon juice
- 1 t lemon zest
- 1 lb zucchini
- 1/4 C mint, chopped
- 1/4 C black olives, chopped
- 4 oz goat cheese
Instructions
- Cut the ends from the raw zucchini, then use a vegetable peeler to shave the zucchini lengthwise into long, wide strips, about 1/16 inch thick.
- Whisk together the olive oil and lemon juice, mix in the lemon zest, then season to taste.
- Toss the zucchini, mint, and olives in the dressing.
- Plate, garnish with the goat cheese, and serve chilled.
